For most OoT replicas, it feels like you're paying extra for the decoration. Of the rounded replicas (ones that look like the one in the game) I prefer STL's. Getting into the high price range of other brands often makes it seem like you're paying a premium for the decoration rather than getting an instrument that provides additional value to justify the price. STL's is my favorite rounded style replica (closer to how it looks in the game).
I've found that over the years that STL has been slowly modifying their OoT to have a more and more balanced tone and to be more accessible to beginners. A lot of people start on the OoT and STL has been working to make it a doorway ocarina to other instruments. A lot of their fandom instruments seem to follow this template.
To me, if you're gonna spend $100 on an ocarina, you might as well get a Chameleon. You seem to be a little concerned with tuning and to me it's the best possible instrument if you want precise tuning (you can adjust the breath slope with a tuning rod). That said, if you want the OoT decoration, STL's offering is definitely good.
